Big Slice of Heaven: Coco Paloma Desserts

Call it a sweet tooth.  Call it dessert obsession.  Sweets and I get along very well.  I’d like to say I know my desserts.  And let me say, this weekend, my cake bar was raised to a new height and I highly doubt it will be topped any time soon.  I was so very fortunate to have a cake featured at my blog’s first birthday celebration by Paloma Efron of Coco Paloma Desserts

I met Paloma several months ago at a food blogger event, and was instantly able to tell she has keen sense of taste, and a high standard when it comes to cakes.  But, it wasn’t until I met her for a cake tasting in preparation for my blog event that I was able to affirm her talent with my own taste buds.  She is as sweet as her cakes and her talent and passion for baking high quality and exquisitely designed desserts for special occasions is displayed in her culinary works of art and flavour.  My favorite is her 5-tier satin dress inspired cake!!! 

Well, actually, that used to be my favorite, until Paloma so generously contributed the front-runner to my blog event this weekend with my logo on it, accompanied by assorted black and white mini cupcakes for all of my guests– and all on the same evening that she had a wedding cake to deliver just a few hours after setting mine on the display table.  See below!

I was so lucky to have my family and adopted Aunt, Uncle (who’s birthday was the same day!), and cousin travel to celebrate TheRebeccammendations’ 1st birthday with me.  After the celebration (thank you to EVERYONE who joined in on the fun!), we shared a fabulous dinner at The Belmont that was bookended by digging in to this delicacy that my tastebuds are still craving.  The perfectly laid chocolate cake layers were filled with rich chocolate frosting that my Grandma said was “like fudge”.  

Shortly after slicing the cake, we noticed that two other parties eating dinner nearby were eyeing our cake.  A few moments later, a woman in one of the other parties came by to admire the happiness of our group.  Although we had much to celebrate that night, we think the cake had a magnetic attraction, bringing people together, both old friends and new.  We couldn’t help but share this masterpiece with our new friends to spread the dessert wealth (and not just any dessert–the best, I mean, the best chocolate cake); our new vegan friend thought it looked so good, even she ate it!  I was blown away by the freshness, the size of the cake layers, the richness of the chocolate frosting layer dividers.  My little, I mean big, slice of heaven was just that– heavenly.  Coco Paloma Desserts is a class act when it comes to cakes, and I am so glad Paloma was able to give a taste to everyone who came to celebrate local entertaining!
