Eric Silverstein, the driving force of The Peached Tortilla, was so generous, he not only shared the menu with us before it is posted to the restaurant website, he’s giving us a sneak peek of the photos of the culinary creations we get to soon enjoy! Courtesy of Meghan Heller of DigiMeg Photography, don’t these funky, focused, and colorful photos make you want to jump right in and take a bite?
The BBQ Brisket Slider: Tender brisket, creamy jalapeno slaw, smoky roasted peach BBQ sauce served on a sweet Hawaiian roll. Can you believe these gourmet goodies will be served to us out of a mobile truck?
Pimento Cheese Fries: Fresh cut Belgian fries tossed in a secret recipe Pimento cheese spread.
Crunchy Catfish Taco: Southern spiced cornmeal encrusted Catfish, creamy jalapeno slaw, bacon braised mustard greens.
Take a look and visit The Peached Tortilla website to see more in the coming days. Oh, and don’t forget to follow them on Twitter to find out where they’ll be since they’ll be constantly on-the-go!

I am so glad I talked to Eric about the joys of pimiento cheese for at least 30 minutes that night. Now they are covering delicious fries. I cannot wait to eat them!
